Single Lady for a Weekend

Move over Beyonce.

Poor Will came down with a pretty bad stomach flu on Friday night, and banished himself to the other end of Orlando for the entire weekend in order to avoid spreading his germs around. This meant two things:

1. No traditional weekend date-night (booooo)

2. More time to study for my last final (bittersweet booooo)

In order to mend my single-lady heart, I spent Friday and Saturday night in the company of Alana, and the rest of the weekend walking Popcorn, running errands, finishing up school stuff, etc.  Oh, and naturally my newfound single-lady status granted me a LOT more time in the kitchen –

Brown “fried” Spanish rice with organic chicken, green peppers, onion, spinach, and Sazon seasoning, topped with Greek yogurt.

 

Many-a-butternut squash/PB muffins topped with chocolate peanut butter

 

Chocolate Covered Katie’s blueberry pie pancakes (with Bob’s Red Mill GF all purpose flour), slathered in coconut butter

 

 

More coconut milk cookie dough ice cream

 

Chickpea, goat cheese, red pepper, broccoli brown rice tortilla pizza

 

and last night’s star-of-a dinner, light teriyaki tofu stir fry + quinoa!

 

Light Teriyaki Tofu

 

Serves: 3-4

Cook Time: About 10 minutes

Total Time: 45 minutes

Ingredients:

  • 1 14-oz. package extra firm tofu, drained
  • 3 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 1/2 Tbsp agave nectar (or honey)
  • 1-1/2 tsp minced garlic
  • 1 Tbsp Stevia (or other sweetener)
  • 1 tsp cornstarch
  • Salt & pepper to taste
  • 1 Tbsp extra virgin olive oil

Directions:

1. Press tofu between paper towels or with a tofu press in order to soak up extra liquid. Dice tofu block into cubes.

2. In a small bowl, combine all other ingredients except olive oil. Stir to combine.

3. Place tofu pieces inside of seal-tight container and pour in marinade. Close container and allow tofu to sit in mixture for at least 30 minutes, flipping container several times throughout. This will ensure that all of the tofu pieces are equally marinated.

4. In a large skillet or wok heat the olive oil over medium-high heat. Spread oil throughout bottom of the pan and then add the tofu. Stir fry gently (depending on how soft your tofu is) until golden brown (about 10 minutes).

5. Serve over stir fried veggies, rice, or noodles.
