It’s Wednesday already?
I don’t know about you guys, but these weeks have been FLYING. Not that I mind too much because in my mind the faster the weeks go = the faster the holiday season arrives—but it’s still creeping me out! Does anyone else feel like the older they get, the faster the years pass by?
And if you don’t, would you mind sharing the fountain of youth with me?
Okay, before I get any weirder, let’s dig in to all the goodies that I ate yesterday via the What I Ate Wednesday party!
Breakfast (5:30 AM)- I didn’t have to go into work until the afternoon, but still woke up early so that I could make it to the polling area before the crowds went nuts. Even arriving 30 minutes before my precinct opened, I still had to stand in line for an hour and a half total, which apparently isn’t even that bad compared to some peoples’ 3+ hour wait (Will included).
My pre-voting fuel was pretty hefty—Two slices of brown rice toast slathered in peanut butter and a sliced banana half with two eggs cooked in coconut oil on the side.
Served with the rest of my banana half + more peanut butter.
Then it was voting time!
Luckily I brought Mockingjay with me so the wait wasn’t bad at all. Not to mention that the people-watcher in me had a blast listening to all the conversations that were going on.

Workout (8:30 AM)- After returning from the polling place, I went for a 3 mile run/walk around my neighborhood. My running stamina is NOTHING like it once was, but I still enjoy easy peasy jogs whenever I feel the urge.
Lunch (11:00 AM)- Yep, I totally ate lunch at 11:00 AM and I have no shame
A little before noon I threw together a stir fry of brussels sprouts, red onion, spinach, garlic and crumbled turkey bacon, all cooked in more coconut oil.
Followed by a rice cake + Sunbutter and a pre-work cup of coffee with Hazelnut coconut milk creamer.
Snack (2:30 PM)- I had packed up some veggies to take with me to snack on at work and tactfully ate them from the inside of my purse
while rocking my “I voted today” sticker on my lab coat.
Aaaand this photo totally reestablishes the current urge I have to cut my hair again. Should I do it!?!
Dinner (5:00 PM)- Work ended earlier than usual so that everyone could go vote, so I came home around 4:30 to a sleeping Popcorn
and a bigggg salad. And I mean BIG.
This monster contained just about everything I could think to throw into it: Romaine, mixed greens, roasted honey gold potatoes, avocado, red bell pepper, green bell pepper, tomatoes, sliced turkey, turkey bacon pieces, goat cheese, and cilantro. It was gloooorious!
Snack (7:00 PM)- Another rice cake with cottage cheese and Sunbutter. Never gets old, my friends
I wasn’t lying when I said that nut butter made up it’s own food group yesterday and I’m definitely not complaining about it either.
In fact, that reminds me that iHerb will most likely be getting a new Sunbutter order from me verryyy soon. Has anyone tried the version with added flax or the organic variety?

Your salad looks pretty ROCKIN! I used to love sliced sweet potatoes on my salads – I don’t know why I stopped doing that! I bet it would be delicious with white potatoes too, roasted in dill and parmeasan…YUMMMM!
SN – as to why we never hung out in Orlando…that’s beyond me!!! If you’re ever back up this way, we’ll have to make it happen!
You’re making me crave rice cakes with almond butter now! Justin’s vanilla almond butter is my favorite!

Ahh I understand your should or shouldn’t question about cutting your hair! I actually have a big change coming up in that departmental the end of this week..

Ahh nut butter! I have to limit myself because I can and will eat an entire jar in no time flat. But My fave is almond butter. I just can’t stop!

Glad to know I’m not the only one who has those insatiable hunger days but I’m going to start adding more nut butter into mine when I have them! Good idea! I still haven’t tried sunbutter but I recently discovered the Peanut & Coconut butter and am in love!

I’d actually never tried sunbutter until a few weeks ago, but I got it from Trader Joe’s and love it! And I still can’t believe people had to wait so long to vote, I didn’t hear any stories like that here in Chicago! (I voted absentee in MO!)
Oh I definitely feel like the older I get the faster time goes. It’s worse with kids…I see them growing so quickly and want time to stand still for a minute. My oldest is almost as tall as me…he can pick me up and carry me around the room. One of his favorite things to do lately. Things need to slow down. Let me know if you get any answers on that fountain of youth! I’d pay handsomely for that info.

I definitely understand your debate as to whether or not you should cut your hair! As someone with a similar hair type (fine, thin, and straight as anything) I used to have hair to my belly button before I chopped it off right above my shoulders. And as a fellow Florida girl, my short hair is much better with the heat

Definitely peanut butter! Nothing better than the “original” in my opinion!
Sunbutter is definitely my favorite nutbutter, but I won’t turn any nutbutters away!
I never think to put potatoes in my salad….that looks good.

Peanut butter continues to be my favorite. Of course, chocolate hazelnut spread is pretty awesome, too!

My favorite nut butter? I used to instantly say peanut butter, no questions asked, but within the past several months I’ve noticed I go in phases among almond butter, sunflower seed butter, and peanut butter. They’re all SO good!

I am head over heels in love with Sunbutter, and it is all thanks to you (and my sis-in-law). I’ve always wanted to try it since reading about it here, and my SIL had some at her house once day so I stole a spoonful…and then another…and another…and oh my…it’s pretty much been never ending ever since!
