February Favorites & A New PB Bowl

Happy Friday!

Thank you all for the wishful thinking and encouragement on finishing the last chapter in my personal training studies! To be honest, I’m still in a bit of shock that the test date is right around the corner. It looks like these upcoming weeks are going to be crunch time to the maximus!

I’m so looking forward to the day where I can actually start to read books for pleasure again. I do a lot of reading for so many reasons, that I’ve decided to hold off on opening a new novel until this overload-of-studying chapter of my life is finally through. Let’s be honest, we all know how long it took me to get through the first book of The Hunger Games while trying to balance school, CPT stuff, and Itty Bits at the same time :D

Moving on! The peanut butter & banana oatmeal recipe that I made yesterday morning was such a hit with my taste buds, that the little guys practically demanded that I make it again. I compromised, telling them that I was just not feeling another bowl of oats, and we settled on the creation of a brand new recipe idea..

Peanut Butter Banana Yogurt Bowl

Pb2 banana yogurt

Serves: 1

Time: 5 minutes

Ingredients:

  • 1 cup 0% Greek Yogurt
  • 3 tbsp PB2 (or 2 tbsp peanut butter)
  • Banana
  • Stevia, or sweetener of choice
  • Vanilla extract
  • Cinnamon
  • Cereal of choice (I used Erewhon GF Crispy Brown Rice)

Directions:

1. Your first move is to create the peanut butter & banana yogurt by combining the Greek yogurt, 1/2 of the banana (mashed), and 2 tbsp of PB2 (or 1 tbsp of peanut butter) in a bowl. Add the sweetener, a sprinkle of vanilla extract and a dash of cinnamon.

2. Next, pour half of your cereal serving into the yogurt bowl and mix it all together. Top the yogurt bowl with banana slices, the remainder of the cereal and the last of the PB2 or peanut butter.

3. Devour!

Ohh i love peanut butter mixed with greek yogurt- such a great combo, especially to dip apples in! And I love the idea at looking back at the month! My favorite part of February was my book club with my friends- so much good food, lots of wine and a great discussion… it was a blast!

I loooove peanut butter and yogurt! Especially when the yogurt is kind of frozen and you mix in hot melted pb until it reaches a magical consistency…um, I kind of really want this now.
