Good news—we’ve arrived!

And everything looks just the same as it did when we left :D

On the way, I made a pit stop at Starbucks to pick up my default travel drink,

A grande café latte with nonfat milk, Truvia, and a splash of half & half.

Being the frequent traveler between Miami and Orlando that I am, I’ve developed quite the strategy for success when it comes to surviving the long four-hour trek. I’ve learned that I need to have coffee, water, and good music, or else the trip is a blow.

Oh, and snacks—but that is always a requirement in any given in any situation ;)

Being that it was already 4:30 when Will & I got back, we dropped off Popcorn and swung right by Publix to pick up some goods for dinner. As soon as we walked into the kitchen, I was already getting my hands dirty in some freshly-bought salmon and veggies. Twenty minutes later, this creation was being devoured.

I call it Roasted Tomato Salmon Pasta

First, I roasted some onions, broccoli and half of a cubed tomato at 450 degrees Fahrenheit for 15 minutes. Then I seasoned a salmon fillet with salt, pepper, and minced garlic, and broiled it in the oven for about 7 minutes on its own.

While the salmon cooked I prepped some carb-less Pasta Slim noodles by rinsing them in a strainer, then heating them in a pan with 3 Tablespoons of tomato sauce. I forked apart the salmon fillet and piled it with the roasted veggies on top of the pasta. Presto! Italian made healthy & easy!

I was really surprised with how much flavoring the roasted tomatoes added to this dish! The next time I make any type of pasta with red sauce, I’m going to be sure to add a few freshly roasted tomatoes for an extra kick.

But then again, salmon was included– so I was set either way ;)

Welcome back home! I definitely need music when I’m traveling by car- I need something to pump me up and keep me motivated haha. And roasted tomatoes are awesome! I love to get cherry or grape tomatoes and roast them in my toaster oven for a snack :) .

Does Starbucks have Truvia now!? Or did you bring your own?

I definitely always require a coffee pit stop for road trips. Unfortunately, coffee goes right through me so that means several more pit stops along the way to go #1! Hooray for too much info!

1) I love that your speedometer is close to 80 while you’re snapping a pic of your coffee!
2) I love coffee on car trips, but then that usually leads to bathroom stops!

Your lunch looks delicious! Freshly roasted tomatoes sounds so yummy to me. I always need good music on long trips otherwise I pretty much die of boredom!

Oh my gosh – that video cracked me up. Love when the guys say, “Oh, so you don’t know karate?” when she tells them that the line is just plain wrong. Oh my – I’ll be sharing that with my hubby for sure. :)
The pasta looks really tasty! And kudos to you for prepping a healthy dinner after a road trip. I usually hit up Subway because cooking is the last thing I want to do. :)

Salmon… yum! Haven’t had that in a while. In fact, I’m not eating nearly as much meat at school as I did at home. Part of it is because my schedule doesn’t really put me in the dining center when it’s open, and part of it is because we haven’t bought much meat for the apartment. At least, not that we’ve really used. Chicken, mostly. I think there might be shrimp in the freezer, but we haven’t opened it that I can tell. Heh.

Definitely need snacks on a roadtrip, particularly those that last longer than two hours. Which my drive to/from school does. Music is good, too!

Starbucks! I love that place! I always get caramel macchiatos with skim milk (extra hot) on my drive back home. I wish they had almond milk in addition to soy. it would add such a great flavor profile to their drinks.
That salad looks amazing by the way. :) I’ve never thought about roasting broccoli, but I think I may have to give it a try!

Good music, snacks and speaker phone are a must! I went to SMU for a year in Dallas. That was an 8 hour drive to New Orleans … yea. Haha. I’m glad I’m back home!
